Spicy Watermelon Gazpacho

  • 6 cups seedless watermelon, chunked, reserve 1/2 cup for garnish
  • 3 cups Bloody Mary mix
  • Dash Tropical Pepper Cayenne Pepper Sauce
  • 1 shallot, roughly chopped
  • 2 tablespoons olive oil
  • 2 jalapeno peppers, diced and divided
  • 1 tomato, diced
  • Jane’s Mixed Up Lime Pepper
  • Jane’s Mixed-Up Steak Seasoning

Put 5 1/2 cups of the watermelon, Bloody Mary mix, cayenne pepper sauce, shallots, oil, and 1 diced jalapeno pepper in a blender and puree until smooth. Strain puree through a mesh strainer over a large bowl; discard solids. Cover and chill for 1 to 2 hours or until very cold. Finely chop the remaining 1/2 cup watermelon, combine with the remaining diced jalapeno pepper and the diced tomato to create a salsa. Correct gazpacho for taste with Jane’s Lime Pepper and divide into soup bowls. Garnish with the watermelon tomato salsa and serve. For another layer of flavor, rim the soup bowls with Jane’s Krazy Mixed-Up Steakhouse Seasoning. The combination of spicy, sweet, and heat will sizzle like a summer night of salsa dancing!
